Fruit of a vine native to India, growing wild in the foothills of the Himalayas, the long pepper tree (Piper longum) belongs to the Piperaceae family which produces pepper.
Long pepper (Piper Longum) is a spice unfairly underestimated by the modern culinary world. The pepper is picked when the cluster is red and the berries are ripe. Once the pepper has dried, the flavor of ripe, candied fruit appears with, in addition, a remarkable chocolate note. The flowers closely resemble hazel tree catkins. Initially, they are red in color, then when dry, they turn black.
Long pepper has a rich, complex flavor that is more like a spicy blend rather than a single spice. It has a spiciness reminiscent of pepper, softened and enriched with warm undertones of nutmeg, cinnamon, cloves and kandamona.
Its pungent flavor is due to piperidine amides. It must be crushed in a mortar and then preferably in a coffee grinder. Long pepper can be used in place of black pepper, especially in dishes that require a more mellow and rich taste.
