Bilimbi (Averrhoa bilimbi) is a fruit tree that is also called a pickle tree for its edible fruits that look like pickles.
Native to Indonesia, it is very popular in the Asian tropics. Introduced in Jamaica in 1793, it then spread to the rest of the West Indies and then to the tropical American continent.
A tree with a short and sparsely branched trunk, it can measure more than 5 m in height. Its straight branches bear compound leaves larger than those of the carambola.
The flowers, dark red, grow in a bouquet on the trunk and the old branches. The fruit looks like a large pickle hanging directly from the trunk and branches. At first translucent green, it takes on a yellowish or even white color when ripe.
The flesh, green and juicy, is acidic and therefore rarely eaten as it is. In Asia, bilimbi is prepared in vinegar like gherkins or as a condiment (curry, pickles).
